Grilled Marinated Pork Chops
Autumn is here and for all my Yankee pals up north, this may be the end of another outdoor season. So ya’ll better make the best of what’s left of any good weather. But, us West Texans can usually sit out on the patio in front of the grill or BBQ pit most all winter. Anyway so’s I just don’t get anybody a bit jealous about getting’ to stay outside on weekends. Here is my last chance fer everybody to get in on the fun, before it gets too cold for Ice Cream and Wild Turkey. This recipe comes from my ol’ pal the ironworker I used to know in Saint Louis, hope he has taught St Pete and the angels how to use cloud nine for them heavenly outdoor events. To be sure we never let cold weather bother us too much ‘cause we always had a good supply of warmer upper on hand. And, you yanks might take that into consideration. Stay warm, keep yer cool, an’ party hearty. Ya’ll might not get another chance 'til Super Bowl Time.
So let’s do some Grilled Marinated Chops. An’ here is what you’ll need
This will take care of 4 of ya’ll
Check with your favorite butcher pal and get him to cut you 4 nice lean boneless pork loin chops at least 1½ inches thick.
And here is the marinade:
2 tablespoons lime juice
- 2 tablespoons soy sauce
- 1 tablespoon chili oil or jalapeno juice
- 1 tablespoon olive oil
- I ½ teaspoons dried rosemary
- 2 cloves garlic minced
- A level teaspoon of black pepper
- ½ teaspoon crushed red pepper
There you are, mix all that marinade stuff together in a bowl big enough to hold the chops too and turn them to coat them all over. Cover them tightly and let them marinate at least 3 or 4 hours or even overnight.
Now you can get outside to the patio and fire up that grill. Remove the chops from the marinade and toss that stuff out. Place the chops on the grill with a cover, and grill for about 9 to 11 minutes, or until slightly pink in center, turn once.
