Cookin' With Leo

Redneck Steak Salad

Some o'them women folk what's been readin' my cookin' recipes was askin' if I don't ever make salads or even eat them. Well, yes I do make and eat them, but I ain't one what likes a platter of lettuce with a splatter of vinegar and oil poured over it. If I want salad, then I want somethin' in it. So this here is a salad with some other things in it beside a mess a lettuce.

Here is what we are going to need:

    A nice lean sirloin steak, about 1½ to 2 pounds.
    1 tsp. of each; garlic powder, black pepper, salt; mixed together.
    1 cup mayo (use the good kind and not no trim and light, fat free, stuff).
    1 package ranch salad dressing mix.
    1 cup sour cream.
    1 pint of cherry tomatoes, halved or quartered, depends on how big they are.
    10 or 12 nice size, fresh mushrooms, sliced thin.
    Optional, leaf lettuce.

Here is how we do it:

Rub that hunk of steak with the garlic, pepper, and salt mix and coat it well on both sides. Toss it on the grill and get it pretty well done. Let it cool, trim off any fat, and slice it up in thin strips.

In a mixing bowl, combine the salad dressing mix, mayo, and sour cream, make sure it is blended well and chill it in the fridge for a while. When ready toss the strips of meat in the dressing mix and coat them well.

Serve the coated meat strips topped with the tomatoes and mushrooms, and top that with remaining dressing mix.

An', fer them diehards what want some lettuce, a couple of leaves of the stuff placed on the plate will make them happy if you put the goodies on that.

That should take care of about 6 hungry kin folk, while you finish up the rest of the BBQ.

Comment: ME!!!! You actually want me to cook something with low CHOLESTEROL??? What's cholesterol, anyway? I never use the stuff. check with the Surgeon General, however. If you tell me what the stuff is maybe I will try to find a recipe for it, whatever.
