This is What You Might Call Jalapeno Pie
(Not Recommended fo My Yankee Pals)

I should warn everyone that this is a Tex-Mex concoction that most Texans, Mexicans, various guzzlers of sorts can down and for that matter, some seem to really like this. For me, well I got used to all this Tex-Mex stuff and even got to like it all. But this one may be a bit much for the average lover of Leo's delights. Before you put the nix on it read this recipe over and see if you would like some hot appetizers. They will go good with a jug of Jose Cuvero to help flush 'em down.

So here is a recipe for Jalapeno Pie

Here is what you need:
    A dozen or so Jalapenos, preferably fresh, but you can use the canned ones
    Seed 'em and slice them into strips
    2 Cups or about 6 oz of grated sharp cheddar cheese
    6 eggs beaten, slightly frothy

How to do it:

  • Lightly oil or spray a pie tin.
  • Sprinkle the cheese in the tin and spread it out evenly.
  • Arrange the Jalapeno strips over the cheese.
  • Pour the eggs over the top.
  • Bake for 45 minutes at 275º.
  • Slice into pie wedges and serve warm with Tequela.
